Job Description
Overall responsibility for the efficient and effective running of the kitchen and food production outlets for Omni Hotel. The execution of all company policies/procedures to ensure that all services provided achieve established standards.
Responsibilities
Check staffing, uniforms, daily production sheets, and quality of sauces
Train associates on menu items to daily specials are known and there is consistent plate presentation of all items
Check with Banquet Chef biweekly and daily on necessary soups, stocks, and bases needed to fully operate banquet production
Ensure all brunch items are prepared to standard. Ensure production quality is met and is ready is to be delivered in a timely basis
Responsible for all areas of the kitchen operation in the absence of the Executive Chef and will be held responsible for overall operation
Responsible for cost controls and menu planning along with the Executive Chef
Monthly training class with your associates including all culinary and stewarding associates
Qualifications
Candidate is required to have at least 2 years previous culinary management experience in a high volume, full service Four Diamond Kitchen
Must possess strong organizational, management, culinary, communication, and motivational skills
Must be proficient in all aspects of the Food & Beverage/Hospitality industry control procedures
Must possess strong background in analytical cost efficiency kitchen management, regional cuisine with all aspects of proper production & presentation methods
Must have knowledge of Microsoft Office (Word, Excel, and PowerPoint)
Must have an unexpired Manager Serv Safe Exam certification
Must be able to stand for 8+ hours per day
Flexible scheduling to include nights, weekends, and holidays
